Oregano

Make hot roll mix according to directions on box. Add a dab of butter, let rise. Spread dough in a greased 10" x 18" pan. Place sliced pepperoni on dough. Pour on Spaghetti sauce. Sprinkle on grated Romano and Basket cheese. Add a touch of Oregano. Cook at 350 degrees until edges are brown.

Sfinge

(Italian doughnut eaten on St. Joseph's Day)

1/2 cup shortening

1 cup boiling water

4 large eggs

1 cup cake flour

1 tablespoon whiskey

1 teaspoon baking powder

Pinch salt

Put shortening and water in saucepan, bring to boil. Add flour all at once and stir over heat until mixture leaves sides of pan and forms a ball. Cool slightly, add unbeaten eggs one at a time, beating well after each. Stir in whiskey.

Drop by teaspoonful into about four inches of hot frying oil (about 375 degrees). Doughnuts will expand to about four times original size. Do not crowd them. Fry about five minutes. They will then turn by themselves. Roll in powder sugar.
